Healthy Vegan Peanut Date Bar

Peanut butter has been an ingredient that we use a lot in the kitchen. Mainly for breakfast as a topping and, in energy bars. So it was no brainer to create ( mimic a snickers bar but without the caramel and vegan version ). Some sort of healthy snack, without a sugar and, it’s totally vegan.

It is easy to make but, you need a time to keep it int he freezer for a little while and then, in the fridge. It does melt a lot between your fingers so no good to transport unless is from one room to the other. Well, more for you, right?!

Peanuts are rich in protein, fibre and fat – “good fats.” Peanuts are excellent source of Magnesium. And, you know what Magnesium does – supports your muscle and nerve function and, energy production Dates are great for healthy bowel movements, stabilise your sugar levels, high in antioxidants and, also support Brain functionality. Dates are highly nutritious, and taste sweet. So its is your healthy – natural source of sweetness.

This healthy bar is gluten-free, sugar-free and vegan.  Here is the recipe to re-create in your own kitchen.

Healthy Vegan Peanut Date Bar

Ingredients you need: 

  • 150g Peanuts
  • 150g Almonds
  • 100g Virgin coconut oil
  • 1.5 tsp ground Cinnamon

Process:

Blend peanuts, almonds and cinnamon powder in a food processor till roughly blended – if you like a bit more texture ( as we do ) stop blending sooner.  On the pan, melt coconut oil and, once melted – which will happen within few minutes mix with your prepared blended powder mixture. Stir it once or twice and, place it in to a dish. We used two small Le creuset dishes. Press it hard with either wooden spoon or spatula in all four corners. Once done, prepare your second layer. See below.

Squidgy layer – your second layer: 

  • 150ml Oat milk or any other plant based alternative
  • 140g Peanuts
  • 200ml Peanut butter
  • 5-7 Dates pitted

You need either Nutribulet or Vitamix to blend all these ingredients together. Takes less than 5 mins to blend all through.

For ADULTS only: Add drizzle of Disaronno – Amaretto to bring that’ extra flavour.

Then, spread equally the Peanut butter & Disaronno squidgy toppings on the first layer which you already have beautifully spread in your dish and, then put straight into your freezer.

Check in a couple of hours, cut in your favorite squares, long pieces if you prefer and, enjoy your healthy snack!

If you decide to go for extra chocolate topping, then, melt your chosen chocolate ( we did 90% dark chocolate really dark ), with coconut oil and, pour all over the bar. You can cut in the half to have with chocolate and a half without.

We did go for very dark chocolate as we want to stay away from sugar but, it’s your own choice if you decide for milk chocolate. All in moderation, I say.

Enjoy making these as well as eating them! They are delicious – even my yoga students last week agreed! Today, we already had a couple a long strips with a nice a cup of tea.
