Goddess Roots Soup — warming and balancing as the season turns.

This week I’ve been leaning into soups — simple, nourishing, and full of seasonal goodness. One of my favourites (and the one I’ll be making for our Women’s Day Retreat this Friday) is this Beetroot, Carrot & Orange Soup. It’s earthy, vibrant, slightly sweet, and has a citrus lift that feels like sunshine in a bowl. Perfect for this time of year when we need a little extra warmth and brightness.

Goddess Roots Soup

Recipe (serves 4)

  • 3 medium beetroots, peeled & chopped
  • 6 large carrots, peeled & chopped
  • 1 onion, chopped
  • 1/2 fresh red chilly ( seeded )
  • 1 tsp spoon of fennel seeds
  • 2 cloves garlic, crushed
  • 1 tbsp olive oil (or coconut oil for a richer depth)
  • 1 litre vegetable stock (or mixed with 1 spoon of miso paste if you prefer)
  • Zest & juice of 1 large orange
  • Sea salt & black pepper, to taste
  • Fresh dill as garnish or even fresh thyme
  • Oat cream or dollop of coconut cream on the top
  • Optional: a pinch of cumin or ginger for warmth

Method:

  1. Heat oil in a large pan, sauté onion, fennel seeds, fresh chilly & garlic until soft and fragrant.
  2. Add chopped beetroot and carrots, stir for about 10 minutes for extra flavours.Chopped beets, carrots, red onions, and whole garlic cloves simmer in a pot with a wooden spoon—Goddess Roots Soup, warming and balancing as the season turns.
  3. Pour in stock, bring to boil, then reduce heat and simmer until veggies are soft (40 – 50 minutes).
  4. Blend until silky smooth. Stir in orange zest and juice at the end. Start with a half of the juice so it is not too sweet and, you can adjust accordingly.
  5. Taste and adjust seasoning. Serve warm with a drizzle of olive oil or dollop of coconut cream or oat cream. I also sprinkled a shelled hemp seeds for extra healthy fats, protein and healthy digestion.
