Pear, Pecan & Cinnamon Autumn Crumble

with Kefir Yoghurt, Fresh Blueberries & Mint

Ingredients

For the spiced pear base:

  • 4 ripe pears, peeled, cored, and sliced
  • 1 tbsp coconut oil (melted)
  • ½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • 1-2 tbsp maple syrup
  • Pinch of sea salt

For the crumble topping:

  • ½ medium size mug gluten-free oats ( 1 mug if you like more oats )
  • ½ mug  pecans, roughly chopped
  • 1 tbsp coconut oil
  • ½ tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • 1 tbsp coconut sugar or maple syrup (optional)

To serve:

  • Fresh blueberries
  • A dollop of Kefir yoghurt, plain preferably
  • Fresh mint leaves

Instructions

1. Preheat the oven: Heat to 180°C / 350°F.

2. Prepare the pears: In a bowl, toss the sliced pears with coconut oil, cinnamon, allspice, maple syrup, and a pinch of salt until evenly coated. Spread the mixture in an ovenproof baking dish. If coconut oil is a hard substance ( like mine was ), warm it all up on medium heat for about 5 minutes.

3. Make the crumble topping: In a pan, warm coconut oil over medium heat. Add gluten-free oats, chopped pecans, cinnamon, nutmeg, and coconut sugar, stirring for about 10 minutes until golden and fragrant. It took me about 10 minutes.

4. Assemble: Spoon the warm crumble mixture evenly over the spiced pears.

5. Bake: Cover the dish with baking foil ( I use parchment & foil ) and bake for 35 minutes. Remove the foil and bake for another 15 minutes, until the top is crisp and lightly browned.

6. Serve: Allow to cool slightly. Serve warm with a dollop of kefir yoghurt, a handful of fresh blueberries, and a few mint leaves for brightness and balance.
