Chia seeds are rich in omega-3 fatty acids, fiber, and antioxidants, promoting a healthy gut microbiome, supporting brain function for improved mood, and aiding digestion. Silken tofu provides plant-based protein, essential amino acids, iron, and calcium, which support muscle repair, bone strength, and overall cellular health, contributing to balanced energy levels throughout the day and stabilising mood. Strawberries and peaches offer vitamin C, antioxidants, and fiber, which boost immune function, enhance skin health, and aid digestion, fostering a healthier gut and promoting a positive mood.
It is one of the simplest desserts I have ever made. it is very versatile; you can add any fruits of your choice, cocoa powder or, anything you enjoy in a dessert. I found it super delicious and healthy. So, here are the shortest instructions that I have ever shared.
Strawberry Chia Silken Tofu Mousse
Ingredients:
Serve 2 people
- 28 strawberries
- 2 tsp chia seeds
- 1 block of Silken and Smooth Tofu
- 1 fresh juices lime juice ( or lemon )
- 1 tsp lime zest ( grated lime skin )
- 6 brazil nuts, finely chopped
- 6 hazelnuts, finely chopped
- 1-2 tbsp organic honey or maple syrup ( optional, for a bit of sweetness )
- 1 peach ( optional, for extra flavour antioxidant properties )
Instructions:
In a blender or food processor, I use vitamin or NutriBullet, combine the silken tofu, fresh lime juice, lime zest, washed strawberries, and a peach and, blend for about 3mins. until the mixture is smooth and creamy. Taste the mixture and now add your honey or maple syrup. You can also add chia seeds and blend them but, I prefer to add them after. Once all blended through, pour it in to the glasses or serving small bowls and, then, add chia seeds. Blend
Assemble the Mousse:
Pour the mousse mixture into serving bowls or glasses. Add chia seeds in each individual glass, stir it well and, top each serving with fresh strawberries and a slice of peach, brazil and hazelnuts, sprinkle extra chia seeds.
Chill and Serve:
Refrigerate the mousse for at least 1 hour before serving. This will allow the flavours to meld and the mousse to set to a perfect, creamy consistency. Just before serving, you can garnish with additional lime zest, or even fresh fresh mint and, it is ready to serve. If you make more, make sure you consume within 3 days of making it. It is better to make fresh and eat it on the same or following day.
Be prepared, this Silken Tofu Mousse is a quite addictive. I seems to be making them at least a couple of times per week now.
