I don’t share enough about the herbs growing in my I don’t share enough about the herbs growing in my garden because I always assumed everyone uses fresh herbs daily. 🪴

But I still meet so many people who don’t really keep herbs in their kitchen, so I thought I’d start with one of the easiest and most useful: Mint 🌿

Mint is incredibly easy to grow, comes back year after year, and makes the simplest, most refreshing herbal tea.

Just pick a handful of fresh leaves, pour over hot water, let it steep for 10–20 minutes, and enjoy it warm. On hotter days, let it cool and pop it in the fridge for a naturally refreshing iced tea.

Apart from my morning coffee and the occasional sparkling water for mocktails, I rarely buy drinks. Herbal teas—hot or cold—are my go-to all year round, especially in summer.

Some of the reasons I love mint tea:

🌿 May help support digestion and reduce bloating
🌿 Traditionally used for its antispasmodic properties, helping to relax the digestive tract
🌿 Naturally caffeine-free
🌿 Refreshing and hydrating
🌿 Contains antioxidants
🌿 Naturally occurring antibacterial compounds may help support oral health
🌿 Can help freshen breath and leave your mouth feeling clean and refreshed

And if you’d like to learn more about cooking with fresh herbs, I’ll be sharing plenty of them at my next retreat at Tofte Manor.
I’ll be preparing nourishing meals using freshly grown herbs and talking about their traditional uses, flavour profiles, and potential wellness benefits—including herbs that have been associated with supporting cognitive function and mental clarity.

Come and enjoy delicious food, connect with nature, and discover simple
ways to bring more fresh herbs into your everyday life. 💚 Want to join? DM directly… 🙏💚

Walking through the woodlands in the rain.☔️ To Walking through the woodlands in the rain.☔️

To be honest, I wasn’t particularly excited about the rain when I first stepped outside, but once I started walking, I realised how refreshing it felt. The air was incredibly fresh, I had the right clothes on, and it reminded me of something very important for our health—and especially for our BRAIN 🧠 health.

One of the simplest things we can do to support our brain is to spend time outdoors.

When we walk in nature, we gently increase our heart rate and circulation, bringing more oxygen-rich blood to the brain. This supports cognitive function, mental clarity, mood, and overall wellbeing.

The air we breathe is essential for every cell in our body, but especially for our brain, which requires a constant supply of oxygen to function optimally.

Did you know that our sense of smell is directly connected to areas of the brain involved in memory, emotions, and learning? When we consciously breathe in the fresh scents of nature, we’re stimulating pathways that connect directly to the brain.🧠😮‍💨

Pause for a moment…. In the rain. ☔️

As you’re walking, stop.
Stand still.
Take a slow, intentional breath in through your nose.
Notice the freshness of the air.
Feel it entering your nostrils, expanding your lungs, nourishing your body.
Take another slow breath.
Allow yourself to be fully present with the experience.

Sense, Deep Inhale, Be Present. 😮‍💨🌳☺️

Over time, these simple & regular moments in nature, ( consistency is a key ), can play an important role in supporting brain health and healthy cognitive ageing.
