Pistachio–Cashew Superfood Chocolate Truffles

A rich, nutritious, freezer-set treat made from nuts, dates, and dark chocolate. No baking required, naturally sweetened, and perfect with matcha or coffee.

Pistachio – Cashew Superfood Chocolate Truffles

Ingredients

Nut Base

  • 100 g pistachios
  • 200 g cashew nuts
  • 30 g chia seeds
  • 50 g pecans
  • 150 g dates (pitted)
  • 1 can coconut cream

Chocolate Coating

  • 150 g 100% cocoa buttons or cocoa nibs ( buywholefoodsonline )
  • 1 tbsp coconut oil
  • 1–2 tsp maple syrup (optional, for sweetness)

Toppings

  • Crushed pistachios
  • Fleur de sel (flaky sea salt )

Instructions

1. Make the Nut Base

  1. Add pistachios, cashews, chia seeds, pecans, and dates to a food processor.
  2. Add the coconut cream.
  3. Blend until the mixture becomes thick, sticky, and moldable.
  4. Shape the mixture into small balls or rustic, imperfect shapes — the more unique, the better.
  5. Place them on a lined tray and transfer to the freezer for 1–2 hours to firm up.

Thirty raw, irregularly-shaped Pistachio–Cashew Superfood Chocolate Bites are arranged in rows on a parchment-lined baking sheet, ready for baking.

2. Prepare the Chocolate Coating

  1. In a heatproof bowl over gently simmering water melt the cocoa buttons or cocoa nibs with the coconut oil. Stir until smooth.
  2. Taste and add maple syrup if you prefer a touch of sweetness.
  3. Melting takes about 5-10 minutes.

 

3. Dip and Decorate

  1. Remove the chilled nut bites from the freezer.
  2. Dip each piece fully into the warm melted chocolate.
  3. Immediately sprinkle crushed pistachios and a pinch of flaky sea salt on top while the chocolate is still soft.
  4. Transfer to the fridge for 30–60 minutes until the chocolate shell is completely set.

4. Serve

Cut them in half for a beautiful cross-section and enjoy:

  • on their own
  • with a matcha latte
  • with hot coffee

Bonus tip: If you have leftover melted chocolate, coat the inside of your coffee cup, pour in fresh coffee and warm frothed pecan milk… absolute heaven. 

Dark Chocolate: Health Benefits

Dark chocolate (especially 85–100% cocoa) is known for:

  • Rich antioxidants (flavanols) that help reduce oxidative stress
  • Improved blood flow and potential heart-health benefits
  • Mood support, thanks to compounds like theobromine and phenylethylamine
  • Minerals such as magnesium, iron, and copper
  • Lower sugar, especially when using 100% cocoa

The darker the chocolate, the stronger the benefits — and the more intense the flavour.

Why Dark Chocolate Feels So Good

The combination of theobromine (steady energy and focus) and PEA (mood elevation) is one reason why dark chocolate is often associated with comfort, pleasure, creativity, and even romance. Add antioxidants, healthy fats, and minerals, and it becomes a true superfood.
