This Velvet Berry Mousse, served in a wine glass for a luxurious flair, is not only delicious but packed with nutrient-dense ingredients that support immunity and longevity.

Silken tofu and chia seeds provide plant-based protein and omega-3s, while vibrant red currants and raspberries deliver antioxidants to fight inflammation and energise your morning. Topped with pistachios and a mint leaf, this breakfast is a perfect blend of nourishment and indulgence –  proof that healthy can be beautiful!

Velvet Berry Mousse

The velvet berry mousse is a full of nutrients and protein. A perfect start to your day or, enjoy as a healthy dessert. It’s a great as a protein breakfast. Silken Tofu – a plant-based protein source rich in all nine essential amino acids and keep you full and provides sustained energy. Chia Seeds – packed with protein, omega-3 fatty acids, and slow-digesting fiber. Helps regulate blood sugar, making it an excellent choice for morning energy. Pistachios – adds healthy fats and additional protein for satiety and nourishment. Berries (Red Currants & Raspberries) – natural sweetness and antioxidants energise the body and support cellular health.

Ingredients:

  • 1/2 mug of red currants (fresh or frozen)
  • 100g of raspberries
  • 1 block (300g) silken soft tofu
  • 2 tbsp chia seeds
  • 2 tbsp organic honey or maple syrup
  • 1 tbsp fresh squeezed lime juicy ( or, a dash of almond milk or water to adjust consistency )
  • 1 tsp crushed pistachios (for topping)
  • 1 fresh mint leaf (for garnish)

Instructions:

  1. Prep the ingredients:

Wash red currants and raspberries. If using frozen berries, allow them to thaw slightly.

  1. Blend & Thicken:

Add red currants, raspberries, silken tofu, chia seeds, vanilla extract, and liquid (water or almond milk) into a blender or NutriBullet. Blend until smooth. Let the mixture sit for 5-10 minutes so the chia seeds absorb some liquid and thicken the mousse.

  1. Chill ( Optional ):

Let it cool in the fridge for 30 minutes or more for a firmer texture and cooler treat.

  1. Serve:

Spoon into dessert glasses or bowls. Top with crushed pistachios and a fresh mint leaf for an elegant finish and refreshing mint flavour.
